BBQ Honey Citrus Grilled Chicken with Smoked Paprika and Fresh Herbs
Ingredients :
– 4 boneless, skinless chicken breasts
– 1/4 cup olive oil
– 1/4 cup honey
– 2 tablespoons fresh lemon juice
– 2 tablespoons fresh orange juice
– 3 cloves garlic, minced
– 1 tablespoon smoked paprika
– 1 teaspoon ground cumin
– 1 tablespoon fresh thyme, chopped
– 1 tablespoon fresh rosemary, chopped
– Salt and pepper to taste
Instructions :
1. Prepare the marinade : In a bowl, whisk together the olive oil, honey, lemon juice, orange juice, garlic, smoked paprika, cumin, thyme, and rosemary. Add a pinch of salt and pepper for seasoning.
2. Marinate the chicken : Place the chicken breasts in a large zip-lock bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, ideally 2-4 hours for deeper flavor.
3. Preheat the grill : Heat your grill to medium-high. Lightly oil the grates to prevent sticking.
4. Grill the chicken : Remove the chicken from the marinade and shake off any excess. Place the chicken on the preheated grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). While grilling, baste the chicken with any leftover marinade to add extra flavor.
5. Caramelize with honey : During the last minute of grilling, drizzle a small amount of honey directly onto the chicken for a sweet caramelized finish.
6. Serve : Once fully cooked, remove the chicken from the grill and let it rest for 5 minutes. Garnish with additional fresh herbs like rosemary and thyme for an aromatic touch. Serve with grilled veggies, roasted potatoes, or a fresh salad for a complete meal.
