Sweet and Smoky BBQ Pork Spare Ribs Recipe
Ingredients:
* 2 racks of pork spare ribs (about 4-5 lbs)
* 1/2 cup brown sugar (packed)
* 1 tbsp smoked paprika
* 1 tbsp garlic powder
* 1 tbsp onion powder
* 1 tbsp ground black pepper
* 2 tsp salt
* 1 tsp cayenne pepper (adjust to taste)
* 1 tsp ground mustard
* 1 tsp dried thyme
* 1 tsp dried oregano
* 1/2 cup apple cider vinegar
* 1/2 cup apple juice
* 1 cup BBQ sauce (store-bought or homemade)
* 2 tbsp honey
* 2 tbsp olive oil
Instructions:
1. Prepare the Ribs: Remove the thin membrane from the back of the ribs. Rinse the ribs under cold water and pat them dry with paper towels.
2. Make the Dry Rub: In a bowl, mix together the brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, cayenne pepper, ground mustard, thyme, and oregano.
3. Apply the Dry Rub: Generously rub the dry mix all over both sides of the ribs. Ensure it’s well coated for maximum flavor. Let the ribs sit at room temperature for about 30 minutes to 1 hour to absorb the spices.
4. Prepare the Grill or Smoker: Preheat your grill or smoker to 250°F (120°C). If using a grill, set it up for indirect cooking by placing the coals on one side or turning off one burner. Add wood chips like hickory or applewood to infuse a smoky flavor.
5. Create the Mop Sauce: In a small bowl, mix apple cider vinegar, apple juice, and olive oil. This will be used to baste the ribs while they cook, keeping them moist and adding flavor.
6. Cook the Ribs: Place the ribs on the grill or smoker, bone side down. Cook for about 2.5 to 3 hours, basting with the mop sauce every 30-45 minutes. Maintain a consistent temperature and add more wood chips as needed.
7. Glaze the Ribs: In the last 30 minutes of cooking, mix BBQ sauce with honey. Brush this glaze over the ribs on both sides. Let them cook until the sauce sets and becomes slightly caramelized.
8. Check for Doneness: The ribs are done when the meat pulls back from the bones and is tender. You can also use a meat thermometer to check; the internal temperature should be around 190-203°F (88-95°C).
9. Rest and Serve: Remove the ribs from the grill and let them rest for 10 minutes. Slice between the bones and serve hot with extra BBQ sauce on the side.
