Ingredients:

  • 2 prime-cut steaks (such as ribeye or New York strip)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 4 cloves garlic, minced
  • 2 sprigs of fresh rosemary
  • Favorite grilling marinade (optional)

Instructions:

Preparing the Steaks:The secret is the preparation! Take steaks out of the refrigerator about 30 min before you want to grill them. Put your favorite grilling marinade on both sides of the steak.

  • Start by preheating your grill to medium-high heat. This will ensure a nice sear on the steaks while keeping the inside juicy.
  • Meanwhile, generously season the steaks with salt and pepper on both sides, allowing the flavors to penetrate the meat.
  • For an extra boost of flavor, you can marinate the steaks with a grilling marinade. Simply follow the marinade instructions and allow the steaks to soak up the flavors for the recommended time.

The Grilling Process:

  • Brush the preheated grill grates with olive oil to prevent sticking and create beautiful grill marks.
  • Carefully place the seasoned steaks on the grill, making sure to position them at a 45-degree angle to achieve those classic diamond grill marks.
  • Grill the steaks for approximately 4-5 minutes per side for medium-rare, adjusting the time based on your desired level of doneness.
  • To enhance the steak’s flavor, sprinkle minced garlic and place rosemary sprigs on top of each steak. This will infuse them with aromatic goodness as they cook.

Testing for Doneness:

  • To ensure your steak is cooked to perfection, you can use the finger test. Gently press the center of the steak with your finger. If it feels:
  • Soft and squishy (rare): 120-130°F (49-54°C)
  • Firm but still yielding (medium-rare): 130-140°F (54-60°C)
  • Firm with slight resistance (medium): 140-150°F (60-66°C)
  • Very firm (well-done): 160°F (71°C) and above

PRO TIP: Use a meat thermometer to ensure you do NOT over cook the steaks

Resting and Serving:

  • Once the steaks have reached your desired level of doneness, remove them from the grill and let them rest for about 5-10 minutes on a cutting board. This step allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful steak.
  • After resting, slice the steaks against the grain to ensure optimal tenderness. Serve them up with your favorite sides and savor the juicy.
