Whether you’re hosting a backyard barbecue or simply craving a flavorful meal, we’ve got you covered. Grilled Honey Lime Chicken Skewers:

Ingredients:

  • 1 ½ pounds boneless, skinless chicken breasts, cut into cubes
  • ¼ cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Skewers

Instructions:

  1. In a bowl, whisk together honey, soy sauce, lime juice, minced garlic, paprika, salt, and pepper.
  2. Thread the chicken cubes onto skewers and place them in a shallow dish.
  3. Pour the marinade over the chicken skewers, making sure they are well coated. Let them marinate for at least 30 minutes.
  4. Preheat the grill to medium-high heat. Grill the skewers for about 8-10 minutes, turning occasionally until the chicken is cooked through and has a nice char.
  5. Remove from the grill and let them rest for a few minutes before serving.

Grilled Vegetable Medley:

Ingredients:

  • 2 zucchinis, sliced
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions:

  1. Preheat the grill to medium heat.
  2. In a large bowl, combine zucchinis, red and yellow bell peppers, red onion, and cherry tomatoes.
  3. Drizzle olive oil and balsamic vinegar over the vegetables and season with salt and pepper. Toss to coat evenly.
  4. Place the vegetables on a grill pan or directly on the grill grates. Grill for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
  5. Remove from the grill and serve as a side dish or as a topping for burgers or grilled meats.

Grilled Shrimp Tacos:

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Juice of 1 lime
  • Salt and pepper to taste
  • Tortillas
  • Toppings: chopped lettuce, diced tomatoes, sliced avocado, cilantro, sour cream, lime wedges

Instructions:

  1. In a bowl, combine olive oil, minced garlic, chili powder, cumin, lime juice, salt, and pepper.
  2. Add the shrimp to the bowl and toss to coat them in the marinade. Let them marinate for about 15 minutes.
  3. Preheat the grill to medium-high heat. Thread the shrimp onto skewers.
  4. Grill the shrimp skewers for about 2-3 minutes per side until they are opaque and cooked through.
  5. Warm the tortillas on the grill for a minute on each side. Assemble the tacos by placing shrimp on each tortilla and adding desired toppings.
  6. Serve the grilled shrimp tacos with lime wedges on the side.
